My friend Anissa at Our Chaotic Life hosts a weekly recipe swap and I'm joining in the fun and yum! Pop over to Anissa's for some great treats!

I have chosen to share a shortbread cookie recipe because you can never have enough cookies :D This one is so easy and kids love it.

You'll need:
1 1/4 c all purpose flour
1/4 c superfine sugar
1/2 c (1 stick) butter - use the real stuff!
You can add your choice of extracts, mini chocolate chips, chopped nuts, sprinkles, raisins, candy bits, or color with food coloring. I like to use 1 tsp almond extract.
Preheat oven to 325 degrees.


All you do is put all the ingredients in a medium bowl and rub it between your fingertips until crumbly. If you are adding flavors or candy mix the first three ingredients first then add your yummies. After it is mixed and crumbly, squeeze it to form a ball, then roll it out on waxed paper sprinkled with additional flour. Roll to about 1/2 in thick. Use star cutters, or any you like, to cut out shapes. Place on non-stick baking sheet and bake for 15-20 minutes. Remove and cool on rack. You can add cookie icing if you like, but they are great without it.

Wow, small world. I just asked myself at lunch time what makes a shortbread sugar cookie a shortbread sugar cookie! My daughter loves these cookies (me too), so I decided I should be baking them instead of buying them. Thank you for the terrific recipe!
