Recipe: Sicilian Tortellini Salad

This salad is delicious! I cannot claim it's invention. My husband discovered it at our favorite local sandwich shop. But, once I tried it I fell in love, and was determined to recreate it at home. It just too good not to share, so I'm posting the recipe here. If you enjoy Caprese salad, you are sure to love this!

First, boil your favorite tortellini according to package directions and drain. Or, if you are really brave, make your own.


Next, chop some ripe tomatoes into about 1/2 inch chunks. I used about 5 med/small tomatoes.


Then, give some fresh basil a rough chop.

Once tortellini has cooled a bit, combine these ingredients in a large bowl.


And you'll need this. You could make your own, but this is sooooo good why mess with perfection?


Now, toss it all together, and if you are feeling naughty add some chunks of marinated fresh mozzarella. Mmmmmmm.



Of course you'll have to taste a bite or two, or five. Then refrigerate for as long as you can stand it.

Enjoy your salad chilled, preferably with some warm fresh focaccia.
