Hello sweet friends! Happy Friday - one of the last of this year! Can you believe it? 
It has been another crazy busy week around here and Christmas is nearly upon us. I still have sooooo much to do. How about you?

Just sharing a pick of my little brownie thief this week, then I'm off to prepare for a visit from my in-laws, and a weekend of portrait sessions. Then there's the baking, errands, the last of the Christmas cards to write, the wrapping, cleaning, laundry....oy!

To be honest, I'm not the craftiest person that ever lived. I can appreciate the unique beauty in things that are handmade. And I adore them! But, I just don't have the patience required to create them. Although I do try to engage my kids in artistic endeavors, the mess and tedium of it seriously drives me batty.

 However, I love visiting my friend Gina's blog and she inspires me every time I do. I really wanted to participate in her new Wednesday link up, so I managed to bake some cookies this week...from scratch. As much as I love sweets, I have even gotten lazy with baking and often use a mix (sshh! Don't tell my mother).

Though it is fabulously delicious, I can make no claim to this recipe. I found it through another inspirational blogger,  Tiffany, of June Makes Six. She posted it last week and it motivated me to spend some time baking with my kiddos. So, while this is not a post about my own creativity, it is a post about creating something meaningful with my kids.

 I snapped a few shots with my iPhone as we baked. The kids loved helping and the memories we created were even sweeter than the cookies.

The Easter Pig! and Bunny Cakes Recipe

I love Bakerella. Have you seen her Cake Pops? She's a master at creating these adorable little creatures from cake and candy. They've become quite popular and can be found in bakeries and Starbucks all over. I've been wanting to try them for a while now, and have been promising my 5 year old we'd give it a whirl.

When loading ecoupons on my shopper's card, I found this recipe on the Kroger website. They were so cute and seemed easy enough, so we added these to our Easter baking list.

I bought the ingredients and we were set. They were easy enough to make. But somehow we ended up with little creatures who didn't quite resemble bunnies. We ended up with:

A pig?







A dog?





A mouse?






Not a rabbit in the bunch, lol.

Still, they were fun to make, albeit messy, and the kids loved them. Here is the recipe if you want to give it a try:



Level: Easy (for some, lol)
Prep Time: 1 hour to 1 hour 15 minutes
Cool Time: about 1 hour
Refrigerator Time: 2 hours
Ready In: about 4 to5 hours
Yield: about 48 balls

Ingredients:· 1 package (16 oz) Vanilla Candy Coating
· 1 box Yellow Cake Mix (plus ingredients for mix)
· 1 container vanilla or cream cheese frosting
· 1 bag Large Marshmallows
· Pink sprinkles (decor crystals)
· Pink heart-shaped sprinkles
· Cake writing icing
Instructions:1. Prepare and bake Cake Mix as directed on box; cool completely. Crumble cooled cake into a large bowl. Mix thoroughly with frosting. Roll mixture into quarter size balls and place on cookie sheet; chill until firm.
2. Cut the edge of a marshmallow diagonally in the shape of bunny ears. These will form the bunny “ears.” Sprinkle with pink decors onto the sticky side of the marshmallow (for best results, press the sticky side of the marshmallow into the sprinkles).
3. Melt Vanilla KROGER® Candy Coating according to the directions on the package.
4. Coat a cake ball in the Vanilla KROGER® Candy Coating and place on wax paper.
5. Before KROGER® Candy Coating has set, place the ears on the top of the cake ball, and place one heart-shaped sprinkle on the front of the cake ball for the nose.
6. Draw two dots for eyes with writing icing.

Tip: If cake bites become too soft or are not holding their shape while being dipped, place back in the refrigerator for 20-30 minutes.

Luscious Lemon Poppy Seed Cake Recipe

I was needing a little sunshine in my life, so I made this lemon cake. Seriously, where did Spring go??? I saw snowflakes today! If you need a little perking up, this easy cake might be just the trick. Enjoy!

Recipe:
1 pkg lemon cake mix (I used Duncan Hines Moist Deluxe Supreme) but even a yellow mix would do
1 pkg instant lemon pudding mix
1 cup sour cream (I used reduced fat)
1/2 cup vegetable oil
1/2 cup water
4 eggs
1 tbsp lemon extract
2 tbsp poppy seeds

Glaze
3 tbsp butter, melted
2 1/4 cups confectioner's sugar
3 tbsp lemon juice
1 tsp vanilla extract
Stir until smooth and let stand a few minutes to thicken before drizzling over cooled cake.

To make the cake:
Preheat oven to 350 degrees. Beat all ingredients, except poppy seeds, on low in a large bowl until moistened, then beat on medium for 2 minutes. Stir in poppy seeds. Pour into nonstick or greased and floured 12 cup Bundt pan. Bake at 350 Degrees for 50 minutes or until toothpick inserted in center comes out clean. Cool in pan about 10 minutes then invert onto wire rack to cool completely. Drizzle with glaze, let set a few minutes and serve.

Sweet And Easy Heart Cookie Recipe for Valentine's Day

These little bite-sized cookies are so cute and easy to make. Perfect for a little treat box or bag.

Ingredients:
4 TBSP butter, softened
1/4 C powdered sugar
1/4 tsp red food coloring
1 1/2 tsp milk
1/2 tsp vanilla
3/4 cup sifted all purpose flour

Preheat oven to 350 degrees and line two baking sheets with parchment paper. Put butter in a medium mixing bowl and stir until creamy. Sift in powdered sugar and stir well. Add red food coloring and mix well. Add milk and vanilla and mix. Sift flour into bowl and mix well. Squeeze mixture into a ball with your hands. Dust a rolling pin with flour and flour a work surface. Roll dough to 1/4 inch thick. Use small cutters to create heart shapes. Use a toothpick to add patterns as you wish.
Transfer to baking sheets and bake for 6-8 minutes. Remove from oven and let cool on pans 1-2 minutes then transfer to cooling rack. Once cooled completely cookies can be sprinkled with sifted powder sugar if desired.

Recipe Apple and Sage Pork Loin

I made this for dinner one night last week and it was delicious! The recipe is adapted from McCormick (the spice people). Unfortunately the photo doesn't do it justice. It smelled and tasted wonderful! I served it with garlic roasted veggies, but it would be great with mashed or roasted potatoes too.


Ingredients:

1 1/2 pound pork loin
1 1/2 tsp rubbed sage
1 tsp minced garlic
1 tsp fresh thyme
1/2 tsp ground allspice
1/2 tsp paprika
1 tsp fresh rosemary
1 Tbsp flour
1 tsp salt
2 Tbsp olive oil
1 half red onion thinly sliced
2 small red apples thinly sliced
1/2 cup Marsala cooking wine
1 Tbsp brown sugar

Preheat oven to 350 degrees. Mix flour and all spices and salt in small bowl. Sprinkle all sides of pork loin with seasoned flour. Add olive oil to large skillet and brown pork on medium-high heat. Be sure to brown all sides to seal in the juices. Remove from skillet and set in roasting pan. Add onion and garlic to skillet and cook and stir for 3 minutes. Add apples and cook and stir for 2 minutes. Then stir in Marsala and brown sugar. Bring to a boil then reduce heat and simmer for 5 minutes. Next pour mixture over pork in roasting pan and bake in preheated 350 degree oven until internal temp reaches 170 degrees, approx 45 minutes to 1 hour depending on your oven. Remove meat and let rest for 15 minutes before slicing and serving.

I haven't posted anything pooch-worthy in a while and figured it was about time that I did. Here's a recipe my dogs have always loved. These also make great gifts for pup-loving pals.

Ingredients:
1 egg
1/3 cup peanut butter
1/2 cup mashed banana
1 tablespoon honey
1 cup whole wheat flour
1/2 cup wheat germ
1 egg white, lightly beaten, for brushing

Directions:
Preheat oven to 300 degrees. Lightly grease a baking sheet. Stir together the egg, peanut butter, banana, and honey in a medium bowl; blend thoroughly. Stir in the flour and wheat germ; mix well. Turn dough out onto a floured board and roll to 1/4 inch thick. Cut into shapes with a cookie cutter, place on prepared baking sheet, and brush tops with egg white. Bake biscuits in preheated oven until dried and golden brown, about 30 minutes, depending on size. Remove from oven and cool on a wire rack.

The History Of Ice Cream - from About.com

The origins of ice cream can be traced back to at least the 4th century B.C. Early references include the Roman emperor Nero (A.D. 37-68) who ordered ice to be brought from the mountains and combined with fruit toppings, and King Tang (A.D. 618-97) of Shang, China who had a method of creating ice and milk concoctions. Ice cream was likely brought from China back to Europe. Over time, recipes for ices, sherbets, and milk ices evolved and served in the fashionable Italian and French royal courts.
After the dessert was imported to the United States, it was served by several famous Americans. George Washington and Thomas Jefferson served it to their guests. In 1700, Governor Bladen of Maryland was recorded as having served it to his guests. In 1774, a London caterer named Philip Lenzi announced in a New York newspaper that he would be offering for sale various confections, including ice cream. Dolly Madison served it in 1812.

The first ice cream parlor in America opened in New York City in 1776. American colonists were the first to use the term "ice cream". The name came from the phrase "iced cream" that was similar to "iced tea". The name was later abbreviated to "ice cream" the name we know today.


Fun Stuff About Ice Cream
Did You Know...?
Water normally freezes at 32° F, while a salt solution freezes at a lower temperature. The more salt there is in a solution, the lower its freezing point. This means that when salt is added to ice, it causes the ice to melt. When salt is used in making ice cream, the melting ice pulls heat out of the ice cream mixture. This results in the mixture freezing more rapidly at a cooler temperature than is possible with ice alone. (Salt water is also a good weed killer. So if you make any ice cream, don't pour the leftover water on your mom's favorite plant!)

Why Not Make Your Own Ice Cream?
Here are some easy ice cream recipes that you can make without an ice cream machine.

Ice Cream in a Bag
Place in a small Ziploc bag (heavy duty freezer-type) and "zip" closed: 1 tablespoon sugar, 1/2 cup milk or half & half, and 1/4 teaspoon vanilla. Place in a gallon-size Ziploc bag and "zip" closed: 6 tablespoons rock salt or table salt, the filled and zipped small bag, and ice cubes to fill bag about 3/4 full. Wearing oven mitts to keep your hands from freezing, roll and squeeze the filled bag for about 15-20 minutes until frozen. Open the outer bag, remove the inner bag and wipe it clean. Enjoy eating the ice cream right out of the bag. Makes 1 serving.


Fresh Fruit Ice Cream
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
1 cup pureed or mashed fruit (strawberries, raspberries, peaches, bananas, blueberries)
1 tablespoon vanilla extract
2 cups (1 pint) whipping cream, whipped (not non-dairy whipped topping)

In a large bowl, combine sweetened condensed milk and vanilla; stir in 1 cup pureed or mashed fruit. Fold in 2 cups (1 pint) whipping cream, whipped. Pour into 9x5-inch loaf pan or 2-quart container. Cover and freeze 6 hours or until firm. Makes about 1 ½ quarts.

Super Yummy Zucchini Bread Recipe

This is one of my all time faves. I remember my mom making several loaves for neighbors at the holidays and as I kid I ate this buttered! It's a sweet bread, so it's really like a cake. These days, I skip the butter (it really doesn't need it and I don't need the fat ;). This bread is moist and soft inside with a delicious crust on top. My kids love it too...green flecks and all!

Ingredients:
3 eggs
2 cups sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
2 cups shredded zucchini (I leave the skin on and use a cheese grater)
3 cups all purpose flour
1 teaspoon cinnamon


Directions: In a large bowl beat eggs until foamy, add all other ingredients. Mix will be thick and look kind of slimy (don't worry...trust me, it's good).  Pour into a greased loaf pan (one large or two small). Bake at 350 degrees for one hour and forty minutes. Cool, remove from pan (I loosen the sides with a spatula first) and serve.  Yum!

Grilling provides a fast, easy and low calorie solution with minimal ingredients but tons of FLAVOR! Below is an example of a recipe from the guide. It is a delicious and healthy dessert that the whole family will love. So throw away those cookies and pints of ice cream, and “wow” your husband and kids with this fantastic grilling recipe.

Grilled Banana Split Sundae with
Homemade Bittersweet Chocolate Ganache


Serves 4
GRILLING METHOD: Direct/Low Heat
4 firm, but ripe, bananas, unpeeled
1 tablespoon white sugar
¼ teaspoon ground cinnamon
1 tablespoon untoasted walnut or other nut oil, plus more if needed
8 small scoops best-quality vanilla ice cream
½ cup coarsely chopped pecans or walnuts, toasted
1 cup chocolate ganache, below
Best quality vanilla ice cream (or favorite flavor)
Whipped cream, optional
Chopped toasted pecans or walnuts
Maraschino cherries, optional

Slice bananas in half lengthwise and crosswise so each banana yields four pieces. DO NOT remove peel. Set aside. Mix sugar and cinnamon and set aside. Brush bananas lightly with oil. Sprinkle cinnamon-sugar on cut sides of bananas. Let bananas sit for 5 minutes.

Place bananas cut-side down on a clean cooking grate over Direct Low heat. Cook for 2 minutes or until grill marks appear. Using a pair of long-handled tongs, turn over and let cook 5 more minutes or until the skin pulls away from the banana.

Arrange 2 banana halves without skins on each serving plate. Top each serving with 2 scoops of ice cream. Ladle ¼ cup of hot fudge over each sundae. Sprinkle each with 1 tablespoon of chopped nuts, whipped cream and place a cherry on top. Serve immediately.

Note: You can follow the method for grilling the bananas and use any fruit. Rings of pineapple, stone fruits (peaches, plums, apricots) with the pit removed, apples and pears are perfectly suited to the grill.

Chocolate Ganache
Serves 8
6 ounces 70% bittersweet chocolate, preferably Sharffen Berger®
cup heavy whipping cream
2 tablespoons sugar
2 tablespoons liqueur (such as Kalhua, Frangelico; Dark Rum or Bourbon)
½ teaspoon vanilla extract


Make the Ganache up to 2 days in advance. Chop chocolate bar into bite-size pieces or measure chips. Heat cream to almost boiling, add sugar and stir to combine. Remove from heat and pour over chocolate pieces. Whisk vigorously until melted, and cream is completely incorporated. Add liqueur and vanilla, stirring constantly until mixture is cool the touch. Cover with plastic wrap and set aside or refrigerate.


Note: If refrigerated, it will need to be brought to room temperature and warmed before serving.

Cool As A Cuke Summer Pasta Salad Recipe

I love a good barbeque, but let's face it, some days it's just too hot to grill. That's why I love having recipes for fresh salads and simple sandwiches on hand for those hot summer nights when grilling just seems like punishment. And, after a long day on the beach when everyone is wiped out, having a cool  salad waiting in the fridge can keep the crankies at bay.

I'm more of a throw it all together kinda gal, than a recipe follower. I like to look at a cookbook or website for ideas and then make my own concoction. I've come up with some great dishes this way...only problem is, sometimes I can't replicate them exactly, lol. Still, it's the method that works best for me, and I try to write down the good ones before I forget. Here's a recipe for a cucumber pasta salad that I whipped up last week. It got two thumbs up at our house, so I think it's a keeper. Keep in mind that I eyeball rather than measure, so less is more if you are unsure of proportions. It's always easier to add then take away!

Cool As A Cuke Summer Pasta Salad:
1 box of your favorite pasta, cooked according to box directions, drained and cooled
1 med cucumber, diced (I like the English variety)
1 small or half a large sweet red pepper, diced
3 boneless skinless chicken breasts, diced and sauteed in your favorite Light Italian dressing (about 1/2 cup tossed over chicken) then drained after cooking
1/2 cup bacon pieces (I use Hormel's)
1/3 cup light mayo (I like Duke's)
2/3 cup Creamy Cucumber salad dressing (This can be hard to find. Kraft makes one and so does Kroger Brand.)
1/3 cup light sour cream


Mix all ingredients in a large bowl and chill for about 1 hour before serving. This can be made a day ahead and will taste even better the longer the flavors blend. I realize in the photo my cuke's aren't exactly diced, more like a chunk...feel free to improvise :)

According to the National Food Holiday Calendar, tomorrow is National Peanut Butter Cookie Day. I wouldn't want anyone to be left out of the yummy goodness, so here's a recipe for delicious PB and Chocolate Chip Cookies to help you celebrate.

Peanut Butter Cookies
From the Magnolia Bakery Cookbook

1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup peanut butter at room temperature
3/4 cup sugar
1/2 cup firmly packed light brown sugar
1 large egg, at room temperature
1 tablespoon milk
1 teaspoon vanilla extract
1/2 cup peanut butter chips
1/2 cup chocolate chips

For sprinkling: 1 tablespoon sugar, regular or superfine

Preheat oven to 350 degrees. In a large bowl, combine the flour, the baking soda, the baking powder, and the salt. Set aside.

In a large bowl, beat the butter and the peanut butter together until fluffy. Add the sugars and beat until smooth. Add the egg and mix well. Add the milk and the vanilla extract. Add the flour mixture and beat thoroughly. Stir in the peanut butter and chocolate chips. Place sprinkling sugar — the remaining tablespoon — on a plate. Drop by rounded teaspoonfuls into the sugar, then onto ungreased cookie sheets, leaving several inches between for expansion. Using a fork, lightly indent with a crisss-cross pattern, but do not overly flatten cookies. Bake for 10 to 12 minutes. Do not overbake. Cookies may appear to be underdone, but they are not.

Cool the cookies on the sheets for 1 minute, then remove to a rack to cool completely.

Happy Friday to all! I'm excited that hubs is back home again, after another cruise, and that it's a long holiday weekend! Summer is here and I'm loving the warm sunny weather. Also looking forward to fun pool days with the kids, trips to the beach, evening walks with the fireflies and lots of yummy bbq's. Some of my favorite recipes are summertime fare with fresh garden veggies or seasonal fruit. It just seems easier to play hard and eat well in the summer ;)

Memorial Day is upon us. It is one of my favorite holidays. Really. It marks the beginning of summer: warm days, bbq's, trips to the beach, and long evening walks. The holiday itself always gets my patriotic pride swelling with parades, air shows, and lots of red, white and blue. Sort of a prelude to the big bang on the 4th of July.

Although the holiday is marked with ceremonies and parades in nearly every town in the U.S., there are also plenty of online resources to help you celebrate in style. You can take a virtual tour of Arlington National Cemetery, for example. Or, visit History.com's Memorial Day mini-site for the history of Memorial Day, War History videos, and a look at some famous battle maps. You might also visit The Department of Veterans Affairs for information on veteran statistics and memorial sites.

There are tons of online resources for teaching, such as themed units, and coloring pages, word searches, crafts, poems, and USMemorialDay.org.

And what national holiday would be complete without a good old fashioned American barbeque? Check out this site for awesome burger recipes. Don't forget the potato salad and dessert.

Yummy Healthy Pancake Recipe

Yesterday was National Pancake Day or IHOP day or something or other. Since we don't need much of an excuse for a celebration (or feast) around here, I decided we'd have breakfast for dinner.

I love having breakfast for dinner for several reasons: it tastes great; we don't have to bribe or beg the kids to eat what's on their plates; and it's a cheap way to have a healthy meal. Plus, it's just plain fun and easy.

I threw together a fresh fruit salad, made pancakes, turkey bacon, and some savory scrambled eggs (just add your favorite spices, a little sharp cheddar and some Durkees Famous Sauce - yum). Since we were all starving last night and hubs was in a hurry to hit the gym, we ate quickly and I didn't manage any pictures to share. Sorry :( But, I did want to share this recipe from Kiwi Magazine for whole wheat pancakes. They are delicious and they passed the kid test!

Whole Wheat Cinnamon Blueberry Pancakes:

2 1/4 cups whole wheat flour
2 tbsp sugar
2 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
1 egg
3 tbsp veg oil or melted butter
2 cups low-fat buttermilk
1 1/2 tsp vanilla
2/3 cups pureed blueberries (or 2 small mashed bananas if you prefer)
Cooking spray

Put dry ingredients in a large bowl and whisk together. In a separate medium bowl whisk egg until well blended, add oil (or butter) buttermilk, and vanilla. Add pureed blueberries (or mashed bananas) to the egg mixture and stir. Then add the wet ingredients to the dry ingredients and mix together. Heat a non-stick skillet or griddle coated iwth cooking spray over medium heat. Spoon batter onto pan and let cook for 2 minutes or until bubbles form and edges are dry. Flip carefully and cook another 2 minutes or so (they should be golden brown). Transfer to a plate and repeat until you've used all the batter. Serve with your favorite syrup or jam.
