Maple Pecan Pound Cake

Here's a yummy recipe that I found years ago in a Women's Day Magazine Holiday Baking issue. I have adapted it to my tastes over the years. It's a great breakfast treat for the holidays. Enjoy!

Maple-Pecan Pound Cake

Pecan Streusel:
1 1/4 c packed brown sugar
3/4 c all-purpose flour
1/2 c cold unsalted butter or margarine -- cut in small cubes
2 tsp ground cinnamon
1 c pecans -- coarsely chopped
Maple Poundcake:
1 1/2 c unsalted butter or margarine -- softened
1 1/2 c maple flavored pancake syrup
1/2 c packed brown sugar
1 tbsp pure vanilla
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
7 lg eggs -- room temperature
4 1/4 c all-purpose flour

Heat oven to 325 degrees. Lightly grease an 18-cup tube pan (angel food pan or bundt).

Streusel: In a medium bowl, stir brown sugar, flour, butter and cinnamon with
a fork, or rub mixture with fingertips until crumbly. Stir in pecans.

Poundcake: With an electric mixer on high speed, beat butter, pancake syrup,
brown sugar, vanilla, baking powder, baking soda and salt in a large bowl
unitl blended (mixture will look curdled). Add eggs, one at a time, beating
well after each (mixture still looks curdled).

With mixer on low speed gradually add flour, beating just until blended and
smooth.

Spoon half the batter into prepared pan. Sprinkle with half the streusel.
Pour in remaining batter and spread evenly. Sprinkle the remaining streusel.

Bake 1 hour, 15 minutes to 1 hour, 25 minutes or until a pick inserted in
center comes out with moist crumbs clinging to it.

Cool in pan on wire rack 15 minutes. If necessary, run a thin sharp knife
around edge of pan to loosen cake. Place cookie sheet over pan and carefully
invert both. Remove pan. Place rack over cake and turn cake streusel side
up. Cool completely. Store wrapped airtight up to 3 days at room temperature
or freeze up to 3 months.


Colonix Product Review Pt 2

I am nearing the end of week three of my experience with Colonix and here's an update:

Week two: Continued on schedule with the supplements and did feel that the product was working as described. Though I don't necessarily feel more energetic, I do feel a bit "lighter" and less bloated. I have had little discomfort while using Colonix and my only complaint is that the powder mixture really isn't pleasant even when mixed with juice, and the evening tea doesn't taste good either. I have continued faithfully with each dose, but it would be much more pleasant if it tasted better!

Week three: I am still on schedule with the cleanse and have lost about 4 pounds. I feel thinner and less bloated. I am pleased. While it is a drag to drink the supplements and I have to remind myself to drink enough water (I've always been bad about that) I do feel healthier in general.

I'm nearly done with my 30 day sample and I am looking forward to the end. Though I have never tried any other natural colon cleansing products, I'm sure they all pretty much taste the same. It's not horrible, but just not good. Still, I have to say the product seems to work as promised.

A year ago on December 2nd, a sweet little puppy was born. She came into our lives last February and she has grown a whole lot since then! Now she's a big girl, and she's one of us; part of the family. We can't imagine life without her. She's our sweet, goofy, playful, great dane girl. Happy First Birthday Bella!
